Was Yours a Traditional or Nontraditional Holiday Dinner?

A few of our friends and family decided to go nontraditional for their holiday dinner. Trying to eat healthy and still watching our budget, I would say is nontraditional. It can be a challenge but can be done. Just takes a little more forethought.

We did go traditional on Christmas but we made use of every leftover.  We baked the turkey, dressing, mashed potatoes, yams, green bean casserole, hamburger cheese dip and on and on. We put back several cups of turkey and made turkey pot pie and with the leftover mashed potatoes and cheese dip we made shepherds pie. Making pie crust mix ahead of time sure helped on this day! But for New Years we had a huge roast with potatoes and baby carrots. No sweets that day since we had plenty on Christmas.

I have put my vitamix to a lot of use in the last month, grinding wheat, making pies, bread, ice cream. One of the secrets to food that is better for you is making it from scratch so that you know what is in it. For instance, I can choose what kind of sweetener to put in my ice cream and how much. This makes it nice for my husband since he is diabetic. I will probably be doing more experimenting this next year in sweeteners.

Like everyone else my new years resolution is to lose weight, eat healthier and so on. To that I will add, I want to lose weight, eat healthier, make healthier desserts and not hurt my pocketbook doing it! Happy New Years!

Plan to have a BEETS tonight!

Yes, you read right!
Are you craving something sweet? But still want to eat something good for you? Try beets. Yeah I know. A vegetable that comes out of the ground? But think about this. Some of your sugar comes from beets. You know that white stuff that tastes so sweet and good in your desserts? I juiced some beets one day and was pleasantly surprised.
They are loaded with potassium, magnesium, beta carotene, and folate. These nutrients help fight cancer, good for the heart, helps blood pressure, your bones, and even helps in weight loss! You can put them in cakes and other baked goods also.

Sweet treats can be healthy?

Yes! They can pack a punch! They're packed with anti-oxidants, fiber, vitamins, minerals. Just general all around "good for you" ingredients. That doesn't sound good to you?
Well, it always helps to know a little bit about what your eating too. You know. Those blueberries stabilizes blood sugar, boosts your memory, yum! The carrots in that cake are making my eyes be-e-eutiful! Promotes weight loss,hum...(well that might work). Ginger aids digestion and neutralizes nausea etc. . That didn't do it for you either?

How about you want your cake and eat it too? Now we're getting somewhere! At some point in your life you have to realize that staying or getting healthy is not going to happen by shirr wishing. You have to get motivated and sometimes for me I have to have some things in life to look forward to. Healthy sweet treats is my vision! I think you will like these few to try out and if it gets you hungry for more check the SWEET TREATS in the this cookbook!

Check these sweet treats out!

No-Bake Confections

3/4 cup honey
1/4 cup carob powder
1/3 cup buttermilk
pinch salt
1/2 cup peanut butter
3 cups rolled oats
1 1/2 cups grated, unsweetened coconut
3/4 cup grated coconut for rolling.

In a saucepan, combine the honey, carob, buttermilk, butter, and salt, and boil for one minute. Remove from heat and add peanut butter, blending thoroughly. Add oats and 1 1/2 cups coconut, stirring well. Cool to workable temperature. Form dough into balls about 1 inch size. Roll balls in 3/4 cup coconut and place on wax paper. Chill and store in refrigerator. Makes about 5 dozen.

Or have you ever tried those 'Boston Cream Pie' yogurts spread on top of a graham cracker? Or spreading peanut butter on a slice of fresh apple? You can go a step further and roll the apple rolled in peanut butter and then rolled in chopped nuts.

This is something I did when my kids were little. I would cut a banana in half and put a popcicle stick in it. Roll it in peanut butter or almond bark and then nuts. Freeze it. Then they would have a healthy SWEET TREAT!
