Check these sweet treats out!

No-Bake Confections

3/4 cup honey
1/4 cup carob powder
1/3 cup buttermilk
pinch salt
1/2 cup peanut butter
3 cups rolled oats
1 1/2 cups grated, unsweetened coconut
3/4 cup grated coconut for rolling.

In a saucepan, combine the honey,carob,buttermilk,butter, and salt, and boil for one minute. Remove from heat and add peanut butter, blending thoroughly. Add oats and 1 1/2 cups coconut, stirring well. Cool to workable temperature. Form dough into balls about 1 inch size. Roll balls in 3/4 cup coconut and place on wax paper. Chill and store in refrigerator. Makes about 5 dozen.

Or have you ever tried those 'Boston Cream Pie' yogurts spread on top of a graham cracker? Or spreading peanut butter on a slice of fresh apple? You can go a step further and roll the apple rolled in peanut butter and then rolled in chopped nuts.

This is something I did when my kids were little. I would cut a banana in half and put a popcicle stick in it. Roll it in peanut butter or almond bark and then nuts. Freeze it. Then they would have a healthy SWEET TREAT!
